I think its is very common to pick 3-4 papers depending on how much effort you want to put in to studies during your semester abroad.
I took four papers. 2 papers I would have chosen at my home University, one for some easy credite points and one which is not offered back at home.

You'll typically take about as many classes as you would at home, so you can expect to be enrolled in 3-5 classes during your semester abroad. You might end up taking fewer classes if you choose to do an internship instead, or might have some additional language or culture classes offered through your study abroad program provider, but it's safe to assume you'll take at least two or three classes at a local university, if that's part of your program.
