The InterExchange Work and Travel Australia, Outback program starts with a beach getaway to recover from jetlag, continues with a five-day farm training and includes a guaranteed job placement at an outback farm. You'll earn at least AUD $350/week with free housing as well. Most participants work a bit, take some time to travel and then approach the program support team for help organizing a second job (up to one full year).
