My year long ACC fellowship was one of the most valuable hands-on learning experiences I have ever had. I stumbled on the opportunity on LinkedIn and since I was taking a gap year before getting my masters it was the perfect timing. I was able to serve in Eastern Kentucky and provide capacity building, advocacy, and educational programs to my host site Red Bird Mission. The term benefitted not only myself but also my host site and community of Bell, Clay, and Leslie counties. Though challenging it was wonderful receiving the support I needed to rise to the occasion and serve my community well.
What was the most unfamiliar thing you ate?
I'm not originally from Eastern Kentucky so I got to try hickory chickens! Which aren't chickens - rather a morel/mushrooms. Fried up they are pretty darn good!
