About Program
Designed for all levels, career changers, and aspiring pastry professionals, the Ritz Escoffier Pastry Diploma offers a complete immersion into the art of French pastry-making.
The program includes three progressive levels—Introductory (6 weeks), Intermediate (5 weeks), and Advanced (3 weeks)—covering essential techniques from classic doughs and creams to modern plated desserts and boutique creations. Each level combines chef-led demonstrations with hands-on practice and culminates in a practical exam.
Upon completion of all three levels, trainees earn the Pastry Diploma. The 14-week course (420 hours) also offers the opportunity for a 4-week internship in the Ritz Paris pastry laboratory, subject to availability.
Instruction is in French with English translation simultaneously.
