This course will examine the Mediterranean diet's essential components, emphasizing how the total of their parts is better for nutrition and sustainability.
To compare other Mediterranean and non-Mediterranean diets, the foodways of Chios and Greece will be used as a starting point. The island is a renowned agricultural hub.
We will study food systems, focusing on Chios' products including honey, citrus, wine, olive oil, mastic, and aromatic herbs. We'll discuss cultivation, as well as chemical composition, regulation, use, and analysis.
